Bacon Onion Cheese Spread

I know an onion spread (or dip) is rather ordinary and mundane, but with a few extra touches you can make it rather spectacular.  This dip goes like blazes whenever I serve it to a football crowd, so it's on the menu for this Super Bowl Sunday.







Bacon Onion Cheese Spread


4-5 slices of bacon, drained and crumbled*
2 Tablespoons Joe and Son's Chipotle Olive Oil
1 medium onion, thinly sliced and then cut into diced pieces
16 oz sour cream
8 oz  cream cheese, softened
1/2 cup sliced scallions*
1/2 cup finely grated Cheddar Cheese
Smoked paprika


In a medium sized sauté pan, cook the onions in the Chipotle Olive Oil over low/medium heat for about 30 minutes until they are golden (not dark and charred).

In a bowl, combine the sour cream, softened cream cheese, scallions, bacon crumbles and cheese. Add the onions and stir to mix well.  Sprinkle with the smoked paprika.

May be served cold or warm.

 Chill and serve with crackers.

Or, place in a casserole dish, warm for 30 minutes at 300 degrees and  serve warm with slices of French bread.

* Reserve some scallions and bacon pieces as a garnish over the spread.
